There was once a time when preparing a drink with espresso machines at the local cafe was a labor of love for each of the baristas behind the counter. Each and every cup needed to be prepared individually, with the baristas laboring to grind the beans to exactly the right consistency, and packing them into the basket at precisely the right density to make them right. The milk or creamer would be very carefully steamed, and pouring it into the drink was (and in many places still is) an art form that created beautiful designs and the iconic cappuccino or latte look with the cream leaves.
These days using espresso machines is a matter of slapping a pre-packaged basket of ground coffee into a filter, pressing a button, and making sure not to slop the milk when dumping it into the cup.
What happened? A huge part of the draw of espressos is the exotic luxury that they entail, the hard work that they require to be prepared right, the dedication and love put into each cup! Yet we live in a disposable consumer culture, a society where everything is mass produced and sold as fast and cheap as possible. Long and complicated preparations may be great for romantic coffee lovers, but they are terrible for business. Thanks to the rise of McCafes across the country (and globe) we are now losing this individualized and artistic view of cafes in favor of big gulp lattes and fast brewed espresso shots that are dumped into the cheapest, ugliest instant coffee imaginable for the sake of speed and profit.
This does not have to be the case. You have the power to reverse this tide of cheaply produced lattes for mass consumption simply by choosing your cafe carefully. Do you go to the franchise joint on every corner, or do you buy local? Are your baristas carefully trained in the art of preparing coffee, or are they cogs in a swift machine who are measured in terms of speed, rather than quality? Your money talks, and if you want to keep espressos an art form instead of a value item it’s up to you to spend it in the right places.
